docs(javascript): correct the sanitizer scope, the method table and the ESM story (#998)

The Sanitizer section named three components; fourteen plugins accept
HTML and pass it through the sanitizer, so anyone setting allowList on
Multi Select, Chip Input or a picker had no way to learn it applies.

The methods table described dispose and getInstance as acting on "an
element's modal" — they are the shared plugin API, not Modal's.

The module section told readers to reach for es-module-shims when their
browsers lack importmap support. Import maps have shipped since Chrome
89, Firefox 108 and Safari 16.4; our floor is Chrome 123, Firefox 130
and Safari 17.5, so the shim can never be needed. Removed, and the
section now says what actually holds here: coreui.esm.js is our only ES
module build and it imports Floating UI at the top, so the map is
required whatever you import, while js/dist/*.js are UMD and belong in a
plain script tag.
