docs: give the v6 styling architecture its own page (#921)

The four mechanisms the styling system stands on — cascade layers,
:root design tokens computed in the browser, per-component token
surfaces built with defaults(), and the --cui-theme-* slots — were
documented only as migration notes, addressed to someone leaving v5.
A reader who starts on v6 had no page that says how the system fits
together or where an override belongs.

customize/architecture now carries that: the layer order and which
fights it settles (utilities win without !important, unlayered user
CSS wins over everything, three layers reserved for the user), why
derived values are calc() over tokens rather than Sass arithmetic and
what that means for run-time overrides, the three override levels for
component tokens from a plain CSS declaration to @use … with(), and
how a theme class re-colors a subtree through slots whose interactive
states derive from the base color at run time.
