docs: replace the v5 tail of the browsers page with the v6 platform story (#919)

* docs: replace the v5 tail of the browsers page with the v6 platform story

The back half of browsers & devices still described v5: a section on
`.dropdown-backdrop`, a class v6 does not emit; iOS 9.2 modal-scrolling
bugs with Chrome-40-era links; a Validators section apologising for CSS
browser hacks the v6 stylesheet no longer contains; and two
"Supported"-matrix tables that carried no version information. All of
that is gone.

In its place the page now answers the questions the floor table raises:
how to read the browserslist query (which lines carry mobile coverage
and why `unreleased versions` matters), the full inventory of platform
features v6 leans on, what the floors already clear for anyone building
on top (native nesting, `text-wrap: balance`, container query units,
`dvh`, the `popover` attribute), and what still sits above them — where,
with the Safari floor at 17.5, Safari blocks as often as Firefox
(relative color syntax, `content-visibility`, unprefixed
`backdrop-filter`, scrollbar styling). A short JavaScript section states
that every floor browser runs both the UMD and ESM builds with no
polyfills.

Every version number comes from MDN browser-compat-data queried today,
not from upstream's table — their floors differ, so their safe/not-yet
split does not transfer: `text-wrap: balance` (Safari 17.5) is inside
our range, `content-visibility` (Safari 18) is not, which is the reverse
of both statements on their page.

The platform table names only mechanisms with a UA behavior behind them;
`interpolate-size` and `backdrop-filter` appear in "Not available yet"
with a note on how the library already uses each behind a guard.

* docs: relative color syntax is in the build — say so, and what actually breaks

The first draft listed relative color syntax under "Not available yet",
while the stylesheet ships 62 `oklch(from …)` declarations — every theme
hover and a... (continued)
