Implement bidirectional DShot auto-detection, update coverage gap audit

Add high_pin_count counter to TransferState that detects inverted idle
signaling (pin HIGH between frames) while unarmed. After 100+ consecutive
high-idle frames, sets bidir_detected flag which the ISR/harness propagates
to dshot_telemetry, enabling CRC inversion for bidirectional DShot.

Closes coverage gap #9. Update COVERAGE_GAPS.md with Tier 1 #7-#8 and
Tier 2 #9-#16 audit results: 6 of 8 Tier 2 gaps already present in Rust,
#9 now fixed, #15 already fixed via CaptureConfig.prescaler.

52 of 55 new or added lines in 2 files covered. (94.55%)
