Fix RC-car overrides, servo cal EEPROM save, protocol re-confirmation

#7 RC-car init overrides: Add apply_rc_car_overrides() to EepromConfig —
disables stuck_rotor_protection, forces bi_direction, clears sine_start/
variable_pwm/comp_pwm when rc_car_reverse=1. Duty thresholds get +50
boost in derive_motor_config. Also add comp_pwm guard (sine requires
complementary PWM).

#8 Servo calibration EEPROM persistence: Add ServoCalibrationDone variant
to TransferAction carrying threshold bytes. ISR handler writes them to
config and triggers save_settings_flag for flash persistence.

#24 Protocol re-confirmation: Detection now requires 2 consecutive
matching frames before locking protocol. First detection is tentative
(pending_protocol); mismatched or None resets the pending state.

All 28 coverage gaps now closed or confirmed present.
