revert(docker): remove nat-unprotected gateway mode — not supported on Docker 27

Docker 27.5.1 (dev and CI runner) does not recognize the
gateway_mode_ipv4: nat-unprotected option and fails with
"unknown gateway mode nat-unprotected" when creating the network.

This option was added in commit 9a1f63ec for Docker 28 hardening
but the CI runner has been downgraded to 27.5.1 to match local dev,
so the option is no longer needed or valid.
