Use Node.js 27 alpha for ROS Rolling nightly checks (#1671)

## Summary

Focus the compatibility workflow on ROS Rolling nightly by using published Node.js 27 alpha releases instead of daily Node.js development builds.

## Changes

- Replace the default `27-nightly` selector with `>=27.0.0-alpha.0 <27.0.0-beta`.
- Allow newer Node 27 alphas without pinning a specific release or selecting beta, RC, stable, or nightly versions.
- Preserve manual overrides for `26.X`, `27-nightly`, and exact versions.
- Update the job label and documentation to explain the ROS-focused purpose and alpha prerelease caveat.
