fix: resolve the sepolia subgraphs through the provider (#484)

* test: add an end-to-end suite against a deployed realm

The unit and integration suites prove the service against mocks; nothing
exercised a deployed realm end to end. `yarn test:e2e` now runs six suites
against peer.decentraland.zone by default (E2E_REALM_URL for another realm):
health, owned wearables with paging, ordering and every filter, owned emotes
and names, profile assembly with its ownership invariants checked against the
inventory routes, the explorer backpack routes at the realm root, and the
routes served only from the subgraphs.

The wallet under test is discovered from recent transfers on the realm's L2
collections subgraph and must also have a deployed profile; E2E_ADDRESS
overrides it. The suites are not part of CI since they depend on live data.

* fix: resolve the sepolia collections and names subgraphs through the provider

The sepolia defaults for the L1 collections subgraph and the names (marketplace)
subgraph pointed at Studio deployments under api.studio.thegraph.com that no
longer exist. On a sepolia realm every route served from those subgraphs
failed: lands and the collections list answered 502 and 500, and any owned
items request that fell back from the marketplace API to the subgraphs, such
as a page before the first, answered 502 instead of an empty page.

Both now resolve through the subgraph provider worker at
subgraph.decentraland.org, which fronts Goldsky and Subsquid for
collections-ethereum-sepolia and marketplace-sepolia, exactly as the other
defaults already do. The L2 default now reads ETH_NETWORK from the config like
the rest of the block instead of from process.env.

* test: drop the end-to-end suite

Keep this change to the subgraph defaults fix and its unit spec.
