refactor(grpc-client): generate the read_mask setter from define_query! (#1710)

* refactor(grpc-client): generate the `read_mask` setter from `define_query!`

Ten query objects stored the mask in a `read_mask` field and carried
the same hand-written setter. An optional `read_mask: $mask;` clause
in `define_query!` now adds the field and the setter; the setter keeps
its name, signature and doc.

The other five setters stay hand-written: the two list queries store
the mask in `base_request`, the two checkpoint streams in `options`,
and `ExecuteTransactionQuery` forwards to its batch query. The setter
rule does not take a type parameter, because no generic query has a
mask.

* refactor(grpc-client): inline the `read_mask` setter in `define_query!`

The two `@read_mask_setter` rules only kept a type parameter out of the
optional `read_mask` group, for a setter that also covered generic
queries with a mask. No query needs that, and without the type
parameter the setter fits the group directly.
