* Add a page for people upgrading from Astro CLI 1.x

docs/upgrading-from-v1.md says what v2 changes for a 1.x user, in two
parts: what is new (the pyproject.toml project and astro init's
conversion, astro local without Docker, the vault and astro env, astro
af, linked Deployments, deploy and package, -o json), then what breaks,
with the replacement for every removed command and flag, the renamed
flags that still work hidden, and the behavior changes. The tables come
from a walk of both command trees and from running each 1.x spelling
against a v2 build. docs/README.md links it.

* Remove the demo directory

The demo project, terraform modules and scripted walkthroughs are no
longer maintained; examples/etl-demo stays as the reference project.
Drop the README and etl-demo links to it, and have the e2e AGENTS.md
check compare against the example's copy only.

--format's replacement is -o json (or -o dotenv on env variable get and
list), with no yaml, and astro deployment inspect keeps -o yaml.

#2280 now reports a removed flag only on a command 1.x gave it to: astro
local reset --force, which 1.x never had, is an unknown flag, not a pointer
to --yes.

  --output; say how astro deploy's prompts are answered instead of --yes.
