test: remove more race- and order-dependent coverage

Remote engines and per-namespace MVCC state are published under one lock
without a separate race-only branch, the two cosine clamps share one
branch-free helper, and direct tests cover the sparse top-K replacement,
edge-aggregation min/max, MERGE validation cache hit and projected reads of
missing nodes that timing or map order used to decide.
