test: cover background and order-dependent paths deterministically

Coveralls failed unrelated PRs by a few hundredths of a percent because
the same lines were covered in some runs and not others:

- buildIDCaseExpression sorted map keys with a hand-written insertion
  sort whose swap ran only when map order produced unsorted keys; it
  uses sort.Strings.
- Open's startup search build summary depended on how far the build got
  before a test closed its database; summarizeSearchBuilds is a function
  of its results and is tested for every outcome.
- DB.Search and DB.HybridSearchWithOptions each retried a search that
  ran during the initial index build; one helper, searchAfterInitialBuild,
  does it for both and is tested directly.
- The HNSW maintenance loop stopped on either its stop channel or its
  context, both signalled at shutdown; context cancellation is its only
  exit.
- The server's embedder retry loop is a method whose backoff schedule
  and constructor tests can set, so every attempt, backoff and stop path
  is tested.
