project: add the architecture to macOS package file names

The Build workflow runs the macOS job on macos-15-intel and on
macos-latest (Apple silicon). Both runners produced
re3-installer-<version>-Darwin-Release.zip, and the second
`gh release upload --clobber` replaced the first on the release. Only
one of the two macOS architectures was available to download.

The package system name on Apple platforms is now Darwin followed by
the architecture (CMAKE_OSX_ARCHITECTURES when set, otherwise
CMAKE_SYSTEM_PROCESSOR). The release assets become Darwin-arm64 and
Darwin-x86_64.

Other release assets in the workflow already have distinct names
(win64 from the cross build, winarm64 from MSYS2 clangarm64, the
AppImage, Snap, and Flatpak files with their architecture). Only
Release builds are uploaded to a release.
