docs(Calendar): give calendars its real default and document selectEndDate (#1506)

The options table said `calendars` defaults to 2 while the calendar renders
one panel unless told otherwise, and it had no row for `selectEndDate`, so
the docs check kept it on its waiting list. The row says what the option
does in range selection and that the calendar turns it on and off itself.
