Add GlobDirectories, Glob and include/exclude support to GlobFiles

Pathy.Globbing only exposed GlobFiles, so matching directories and
excluding patterns (both already supported by the underlying
Microsoft.Extensions.FileSystemGlobbing matcher) were unreachable.
Exclusions in particular are close to essential in real projects,
since almost every glob over a source tree needs to skip bin, obj,
node_modules or .git, and doing that by post-filtering with LINQ is
both slower and more verbose than letting the matcher skip those
directories outright.

- GlobFiles(include, exclude) maps directly onto the matcher's
  AddInclude/AddExclude calls.
- GlobDirectories mirrors GlobFiles but matches directories. The
  matcher itself never reports matched directories, so this enumerates
  the directories under the base path and matches each one's path
  against the patterns instead.
- Glob matches both files and directories for the same pattern(s).

The include/exclude overload keeps both parameters as string[], so a
transposed call compiles without error; this repo's own AV1555
guideline avoids named arguments, so the mitigation here is limiting
it to two clearly-ordered, clearly-named parameters and calling it out
in the XML docs and README rather than in code.
