[Log] feat: Configure the psr logger name, path and level (#1338)

# Description

Let an application configure the logger that the PSR adapter wraps.
`publishMonolog` hard-coded the channel name, the log directory and the
level, so an application could change none of them.
`LogPsrConfigContract` now carries `psrName`, `psrFilePath` and
`psrLevel`, the service provider publishes it as its own binding, and
`publishMonolog` reads all three from there.

`psrName` and `psrFilePath` default to null, because the framework
resolves both at run time: the name carries the current date, and the
directory comes from the logs storage path, which the framework knows
only after it sets the base path. A null value keeps today's behavior,
so an application that sets nothing logs exactly where it did before.
