tests: the backends, Pass and Util, profile init, single instance (#1901)

Coverage from a run of every suite under lcov: imitatepass.cpp 78% -> 94%,
realpass.cpp 89% -> 100%, util.cpp 87% -> 96%, pass.cpp 87% -> 99%,
profileinit.cpp 73% -> 99%, singleapplication.cpp 69% -> 96%. Each test
pins an observable outcome (signal payloads, bytes on disk, the exact argv
the fake gpg or git saw, the absence of leftovers), uses recording shell
stand-ins (skipped on Windows) and isolated settings, and was run three
times in a row, once pinned to a single busy CPU, for flakiness.
