Correct two README examples whose response did not match their request (#2965)

Running the README's curl examples against the code they follow, two of
thirteen showed a response their request could not produce.

"Parameter Precedence" declared `get` inside `route_param :foo` but curls
`POST /bar` with a JSON body, which answers 405; and without `format :json`
the response is not the JSON shown. The example is about a path param
winning over a body param of the same name, so it needs the POST: the
route is now `post`, and the block declares `format :json` like the
examples around it.

"Include Missing" showed `"city": "Zurich"` in the include_missing:true
response to a request that sends `"city": "SF"`, as the include_missing:false
response above it does.
