docs(MultiSelect): say that headerTemplate replaces the select all button (#1372)

React and Vue both state it; the vanilla page said only that the header
renders independently of `selectAll`, which reads as though the built-in
button stays. Measured in four combinations: the template renders with
`selectAll` off and always takes the place of the built-in button.

The string path also said "sanitized" without saying what that costs. A
`<button>` is not on the allowlist, so it is dropped, and the actions are
wired only for the element path, which is where controls belong.
