fix(Autocomplete): keep disabled options out of every typing path (#1337)

A disabled option was unreachable in the list, by mouse and by keyboard, but
three handlers on the input went around that guard: Enter on an exact match of
the label, blur on an exact match, and Tab while the hint was showing. The
component then reported the option as selected and fired the change event, and
the hint offered to complete it in the first place.

Selection and hinting now read the options through a filter that drops the
disabled ones, so a disabled exact match is treated as text that matches
nothing: free text with allowOnlyDefinedOptions off, a cleared field with it on.
What the page itself sets is untouched, so an option marked both selected and
disabled still shows as the current value. The no-results check still counts
disabled options, because they are rendered in the list and the search did find
something.

The options table never described the option object, so the docs gain the shape
and a disabled-options example.
