flatpak: build v1.8.1, drop the source overlays (#1750)

The tag has everything the manifest used to overlay from the checkout
(metainfo, square icon, first-run wizard fixes, gpg2 wrapper) and its
make install puts the desktop file, metainfo and icons in place, so the
qtpass module is a plain pinned git source again. This is the manifest
for the Flathub submission (#637).
