docs: sort the options and events tables (#1282)

Eleven options tables and twenty-four events tables were still in the order
rows happened to be added. Sorted by option and event name, so all three
API reference tables on a component page read the same way.

Drawer and Offcanvas headed their events table `| Event Type |`; the rest of
the docs, and upstream, write `| Event type |`.

Two tables stay in their current order on purpose: the Utilities API options
(`utilities/api.mdx`) lists the two required keys before the optional ones,
and the keyboard tables everywhere follow the keys, not the alphabet.

Docs build green, no broken links.
