fix: make the century demo state what it achieves

The demo reported "Started: 36082, Completed: 36082 (expected: 36525)" and the
previous commit explained that gap as advance/2 moving past work its actors had
not scheduled. That explanation was wrong, and this commit corrects it.

The gap is the demo's own rule: the backup state machine ignores a trigger while
it is already backing up, and advance/2 synchronises scheduled events, not the
casts actors send each other, so a backup that falls behind makes the following
midnights get skipped. Instrumenting the demo's exact shape shows the
bookkeeping is exact - started + skipped equals the number of midnights:

    started=36377 completed=36377 skipped=148 total=36525 (midnights=36525)

Nothing is lost by the clock. When nothing lags, which is the common case, the
demo now reports all 36,525 backups started and completed with zero skips.

So the state machine counts its skips, the demo prints started, completed and
skipped, and checks that started + skipped is 36,525 rather than comparing
started against an expectation the model never promised. A shortfall is now a
genuine failure signal instead of an unexamined parenthesis.

Also corrects the README's demo timing, which the previous commit set to "about
a minute" when runs measure 7-12s idle and over a minute under load.

Verified: formatting, and 389 tests passing.
