fix(filestore): load entities from per-entity directories as the CLI and demo project do (#305)

- fsEntitiesStore now loads and saves both entity layouts: the legacy flat
  "<id>.entity.json" and the nested "<id>/<id>.entity.json" datatug-cli's
  vendored model copy and datatug-demo-projects already use. Nested wins
  when both exist and agree; disagreement is a load error, never a silent
  pick. A save keeps the layout an entity was loaded from; a brand-new
  entity defaults to nested.
- Fixture test loads datatug-demo-projects/demo-project-1 (skipped when that
  sibling checkout is absent) through this package end to end: all 8
  entities, the 5 declared Mappings, Project.Validate().
- Unit tests for both layouts, the duplicate-content error, merged/sorted
  LoadEntities, and layout-preserving Save/Delete.
