refactor(scss): mix colours in oklch everywhere, transition the collapse on block-size (#1177)

`$color-mix-space` is `oklch`, yet 70 `color-mix()` calls outside the
scale generator still said `in srgb`. Mixes against `transparent` give the
same colour in either space; the four that blend two colours — the focus
border of buttons and controls, the range thumb's active fill, the
stepper's active indicator and the theme focus rings — now blend in the
same space as the palette they sit on.

`$transition-collapse-property` names `block-size` instead of `height`,
the logical axis the collapse animates.
