feat(Calendar, TimePicker, Rating): read the theme slots (#1117)

The three components painted their selection, range and active items
straight from --cui-primary / --cui-warning, so a .theme-* class did
nothing on them while every other component honours it. The rules read
the theme slots now with the component tokens as fallback: contrast and
bg for the selected cell, bg-subtle for the range tint, bg for the
range-hover outline, the header date hover and the active rating item.
Defaults are unchanged; each docs page gets a theme example.
