fix(Menu, RangeSlider): declare the scroll tokens, prefix the track direction (#1113)

.menu read --cui-menu-max-height and --cui-menu-overflow-y through
fallbacks while only .menu-scrollable declared them, the shape #1084
fixed for the border tokens; both are in the menu map now with none /
visible defaults. --cui-range-slider-track-direction sat outside
$prefix next to the three tokens the plugin writes, but nothing writes
it: it is set and read in the stylesheet only, so it follows $prefix
and the bootstrap theme no longer carries a --cui- name for it.
