docs: mark Modal and Offcanvas deprecated, like Dropdown already is (#1037)

Both components carry `@deprecated 6.0.0 … may be removed in v7 — prefer
CDialog/CDrawer for new work` and describe themselves in code as compatibility
layers, but neither page said so, while the dropdown page has carried the same
notice all along.

The migration guide said the opposite outright — that Modal and Offcanvas are
independent components to pick between per surface — which reads as an
invitation to build new work on a deprecated component.
