docs: put the Theme page in the sidebar (#926)

customize/theme documents the center of the v6 color system — the slot
families, the runtime scale, the theme classes, how to add a color —
and five pages link to it, two from its own section. It was reachable
only through those links: the sidebar never listed it, so a reader
browsing Customize had no way to discover the page the others lean on.

It slots between Color and Color modes, the position matching how the
three pages hand off to each other: palette, then the semantic layer
over it, then the scheme switching.
