docs: mark per-component Sass variables as deprecated (#889)

The CSS variables are the styling API in v6; a component's Sass variables only
seed their defaults at build time, and they go away in v7. Nothing on the pages
said so — and 31 of them said the opposite, closing the CSS-variables section
with "Sass customization is still supported, too." A reader picking between the
two blocks had no way to tell which one to build on.

Each affected `### SASS variables` section now carries the deprecation badge and
one sentence pointing up to the CSS variables; the contradicting sentence is
gone.

Scope is narrower than the heading count suggests, and the difference is the
whole point:

- 68 sections document a component's own `$<component>-*` block — annotated;
- 16 document global knobs from `_config.scss` / `_root.scss` (`$border-width`,
  `$font-family-sans-serif`, the spacer maps, the focus ring). Those stay: they
  are the documented build-time override surface, not a per-component seed;
- the utilities API is not in this set at all — it is edited to change whole
  families of classes and is not going anywhere.
