docs(customize): count the tokens we ship and explain the one dark-mode value (#871)

The page claimed "around two dozen CSS custom properties … with dozens more on
the way". The compiled `:root` block declares 478, and components declare their
own on top of that, so the sentence understated the surface by an order of
magnitude and framed it as future work.

The dark mode section promised "variables scoped to our built-in dark mode" and
then quoted a block holding exactly one, which reads as a broken section rather
than an accurate one. It now says why only one is left: `light-dark()` resolves
both modes for everything else, and shadow strength cannot ride along because a
dark surface swallows the same alpha.

Adds the substitution rule to the component variables section — a variable
resolves where it is declared, so overriding it on a wrapper never reaches the
component.
