docs: run the library JS from js/src in docs dev (#847)

The engine aliases @coreui-docs-js to dist/js/coreui.esm.js, which only
changes on npm run js — so the dev server could pair stale JS with
live-compiled SCSS. Chromium hides the mismatch (interpolate-size animates
in CSS), making it look like a Firefox-only component bug. A dev-only
Vite plugin re-aliases the entry to js/src/index.ts, so source edits
reload docs pages the same way scss edits do; astro build keeps the dist
alias and still exercises the shipped artifact.
