fix: build the version timestamp with git instead of BSD date

date -r takes a file name in GNU coreutils and busybox, and an epoch only in BSD, so the
old pipeline left TIMESTAMP empty on Linux, WSL, Alpine and Git Bash. The version string
came out as master-<hash>- with a visible `date: can't stat` on every make build.
