fix: stop calling the DBAL methods deprecated in 4

quoteIdentifier() and Table::setPrimaryKey() are deprecated as of
doctrine/dbal 4 and go away in 5, and their replacements do not exist in
3, which doctrine/orm 2.20 still brings in. Each call picks the newer one
when it is there.

Both are behind method_exists(), which phpstan reads as always true
against the version the lock resolves to, so the two are ignored by
identifier and path, as the doctrine/orm one already is.
