chore: stop tracking composer.lock, matching the rest of the suite (#45)

Reach and Trumpet were the only two of the seventeen plugins tracking a
composer.lock; the other fifteen ignore it. That meant these two pinned their
dev tooling — PHPUnit, PHPStan, Mockery — while everything else re-resolved
from composer.json on every CI run, so "the suite's PHPUnit version" was two
different things depending on which plugin you looked at.

Standardising on ignoring it. The lock stays on disk locally, so nothing about
a working checkout changes; it is simply no longer in git.

CI already does `composer install --prefer-dist --no-progress`, which resolves
from composer.json and writes its own lock when none is present. Verified by
deleting the lock and running exactly that: 35 packages resolved, then 309
tests / 823 assertions and PHPStan level 6 both green — unchanged from before.
