Add support for Django 6.1 (#843)

* Add support for Django 6.1

main has moved on to 6.2.0-alpha, meaning 6.1 has split into its own
stable/6.1.x branch upstream (RC1 out, final expected ~August 2026).
Per policy, add it alongside main rather than waiting for the final
release.

- pyproject.toml: add the 6.1 classifier
- tox.ini: add 6.1 to the matrix (py312-py314, matching 6.0's Python floor)
- ci.yml: add 6.1 to the matrix + its exclude rule; add --prerelease
  allow to the Django install step, since only 6.1rc1 exists on PyPI
  right now (tox already does this implicitly via pip_pre = true, but
  the CI workflow's raw `uv pip install` calls don't inherit that)
- AGENTS.md: update the matrix table

* Regenerate uv.lock

Was left stale by #842 (Django dependency floor bumped to >=5.2 in
pyproject.toml, but the lock's own requires-dist metadata still said
>=4.2).
