test(mail): add ParsedEmail unit test coverage

Covers case-insensitive header access, bounce + permanent-bounce detection,
chat-notification-reply detection, auto-submitted/auto-reply classification,
TrashNothing source detection and header getters, envelope email-command
routing, toArray, and the routing fingerprint. 34 cases; runs green in the
Unit suite (all 5030 Laravel tests pass).
