build: add speed-optimized release profile to workspace root (#192)

Add [profile.release] to the workspace root Cargo.toml so release builds of axiam-server and every crate it links are optimized for execution speed first, footprint second: opt-level = 3, lto = "fat", codegen-units = 1, strip = "symbols". panic = "abort" is intentionally omitted to preserve per-request panic isolation on the long-running server.
