chore(release): bump version to 1.0.0-alpha3 (#193)

Bump the release version to 1.0.0-alpha3 in lockstep across Cargo.toml (workspace version, inherited by all 13 crates), the 13 Cargo.lock member entries, sdks/openapi.json info.version (kept in sync so the OpenAPI drift gate passes on the tag), the k8s server/frontend image tags, the frontend Sidebar footer + its test assertion, and a new CHANGELOG.md [1.0.0-alpha3] section. No server runtime or API behavior changes.
