docs: reflect v1 (iznik-server) removal merged from master

Merging master brought in the removal of the v1 PHP API (iznik-server/ and the
apiv1 service are gone; image uploads moved to apiv2). Update the developer and
ops docs accordingly: drop iznik-server/ from the component table, describe the
API as v2 with v1 retired-and-removed, and drop the PHPUnit suite (the canonical
README now lists four suites, and the orb has no v1 references). This is the
kind of drift the freshness gate is meant to surface, corrected here manually
since these are the docs' own new pages.
