fix(deploy/noderunner): drop admin SPAs from stage 0

gatekeeper-client and keymaster-client are dev/admin SPAs, not runtime
dependencies. The gatekeeper and keymaster containers themselves expose the
HTTP APIs that Caddy proxies (/api/*, /1.0/*) and that react-wallet talks
to. Per operator preference — admin UIs should be Tailscale-only, not public
internet — leaving the SPAs on by default in stage 0 was wrong.

Stage 0 container count drops from 9 to 7:
  gatekeeper · keymaster · redis · mongodb · ipfs · hyperswarm-mediator · react-wallet

COMPOSE_PROFILES stage 0 default is now: hyperswarm,react-wallet

Operators who want the admin SPAs can append them and expose only via
Tailscale rather than through the public Caddyfile — documented inline in
the env template comment and in SKILL.md's stage-0 description.
