docs: refresh stale H2/H3 note — pure-Zig stacks exist but don't fit

The "nothing usable in pure Zig" premise is stale as of 2026 (quic-zig,
httpx.zig). The conclusion is unchanged and now sharper: they bundle their
own runtime + injected allocator, so they clear neither the zero-alloc gate
nor the own-the-ring model. The fit is a sans-io protocol core — roll our
own (Phase 5) or FFI a sans-io C lib (nghttp2; ngtcp2/nghttp3) heap-routed
like OpenSSL.
