build: keep frame pointers in release builds

perf --call-graph dwarf needs stack-capture permissions that
perf_event_paranoid=2 denies, so profiling the release binary produced
empty stacks. Frame pointers cost one spare register and make
`perf record --call-graph fp` work on the production binary — the
trade every major distro now ships.
