docs: document bb_display backend registry as intentional 4th registration mechanism + bespoke-route exceptions (B1-464) (#645)

- bb_display's s_backends[] + register_backend() is the 4th registration mechanism (distinct from bb_init tiers, bb_registry, described-routes) — ordered probe-and-select-first-success, not a name->ptr map
- bb_prov's POST /save (form body) and GET /* (captive wildcard) are intentional described-route exceptions
- bb_ota_boot's transient boot-progress GET /api/update/progress bypasses described-route because it runs pre-bb_init, before bb_openapi is alive to consume a descriptor
