feat(bulkProcessing): handle new activity log DEV-1416 (#7116)

### 📣 Summary

Project Activity now supports the new backend bulk-processing history
action, with clear user-facing messages for transcription/translation
jobs and a proper Bulk processing filter option.

### 💭 Notes

Changes here:
- Activity constants and action mapping:
- Added bulk-processing to the activity action enum and filter
definitions in `activity.constants.ts`.
  - Added a clear baseline message for bulk-processing logs.
- Activity message rendering:
- Added action-level guard so the specialized wording only applies to
bulk-processing logs.
- Mock data alignment and simplification:
  - New log factory in assetHistoryLog.factory.ts.
- Updated history mocks to use the new factory in assetHistory.mocks.ts:
- Updated action-list mocks to include bulk-processing in
assetHistoryActions.mocks.ts.
- Query/filter path:
- Existing filter pipeline in activityLogs.query.ts now naturally
includes bulk-processing because it is mapped in activity constants.

### 👀 Preview steps

The UI for initiating bulk action is not ready yet, so look at the code
and visit Storybook → FormActivity to see two new logs being handled
there.
