v1.34.7: document canonical source_species axis; deprecate bare species name (#306) (#312)

Adds a 'Species axes' schema reference to the observations module docstring:
mhc_species / source_species (canonical) / host_organism are the three axes;
source_organism + species are the two raw IEDB inputs source_species normalizes
over. Marks the bare 'species' column name as deprecated/legacy (collides with
English 'species'; kept for backward compat). Hard removal deferred as a
breaking change (species is still emitted by the species-summary export and
read by downstream tools). Functional dedup landed in #309.
