fix(test): make knowledge-consolidate tests date-independent

The _record() helper defaulted last_seen to a hardcoded 2026-05-01, so as the
calendar advanced the time-decayed confidence dropped below the consolidation
gate and test_consolidate_falls_back_to_jsonl_when_detailed_loader_raises began
failing (0 lessons vs 1). Default last_seen to a fresh import-time timestamp,
matching the sibling tests that already pass _now_iso_for_test(). Same class as
the budget.py midnight flake fixed in b4de511.
