Normalize specimen fields; refactor specimen query

Refactor specimen-related Cypher and normalize anatomical collection site values. Rewrote the specimens initial_query to use CALL subqueries to aggregate specimen_count, specimen list, specimen_types and specimen_timepoints (with counts as strings) and return consolidated results. Standardized anatomical_collection_site handling across multiple queries using toLower(trim(COALESCE(...))) and switched specimen.collection_date to toString. Fixed an OPTIONAL MATCH alias (removed redundant `:participant`) and updated acs_norm normalization. Also enabled/added mapping entries for the about_page and model index mappings (uncommented and added content.paragraph and node/node_kw mapping).
