Replace verbose single_search_es.yml

Replace the previous 1,729-line single_search_es.yml with a condensed 111-line version. The original file contained many index definitions, detailed mappings and large Cypher initial/update queries; this change drastically reduces file size and complexity, presumably to streamline index configuration. Developers should review mappings and queries in the new file to ensure all required indices and fields were preserved or intentionally removed.
