perf: rework clickhouse pipeline to batch by {event_type, day_bucket} with fresh/stale tiers (#3508)

* saved baseline benchmark prior to logevent changes

* adds day bucket and freshness attributes to logevent for upstream use in pipeline batching, improves clickhouse pipeline topology to avoid the current part churn in mixed batches

* bump version to 1.43.0
